A Parmo (or Escalope Parmesan) is a
traditional dish popular on Teesside in the
North Of England. It’s made of either
chicken or pork, flattened, and covered in
bread crumbs before being deep fried.
It’s then topped with Béchamel sauce and
cheddar cheese before being baked like a
pizza.
Parmos are usually served with chips, coleslaw and creamed cabbage.
It was invented by an American army chef called Nicos Harris. In 1958 Nicos opened a restaurant in Middlesbrough called The American Grill where he first made the Parmo. It’s available in most fast food outlets across Teesside and it’s popularity is forever expanding to the rest of Britain.
